How we run our operation:
We put out 3,000 taps with blue plastic sap bags and holders. The sap is connected in tanks and brought into the sugar house with tractors or pickup trucks. It is strained as it is pumped into tanks and then enters the preheat pan. Then it closed into the 6x18 evaporator where it's cooked down to 32 brix by wood fire. It is drawn off and then finished on LP gas burners to the finished product. Much is canned in containers of all sizes and others are sealed in barrels.
